Roasted Jalapeno Poppers

Fact: eating spicy foods help cool you down.  You had to wonder why so many hot countries eat hot/spicy food right? The spice makes you sweat, and sweating is our bodies natural coolant. When you get hot roast up the peppers. Sweat over a hot grill and spicy food and you’ll be the coolest kid on the block. For this recipe we like to use the Norpro Pepper Roaster, it holds up to 16 peppers and roasting is so much healthier than deep frying. We also like that this roaster has legs that fold for easy storage.

Ingredients
  1. 16 large jalapenos, tops and seeds removed
  2. 16 thin sliced bacon strips
  3. 2 ounce Cotija cheese crumbled (or feta)
  4. 4 ounces cream cheese, softened
  5. 4 ounces grated cheese (smoked, jalapeno, colby, etc.)
  6. 2 tablespoon finely minced or grated onion
  7. 2 tablespoons chopped cilantro (optional)
  8. 16 toothpicks
  9. cooking spray
Instructions
  1. Preheat grill for high heat direct cooking.
  2. Cook bacon until partially done, should start to brown but be limp and pliable. Drain on a paper towel and set aside.
  3. Blend the cheeses, onions and cilantro together in a medium bowl. Stuff the peppers. Wrap the top half of the pepper with bacon and secure with a toothpick.
  4. Spray popper rack with non-stick spray (for easier clean-up), place peppers in holder.
  5. Grill for 15 to 18 minutes, until bacon is crisp and cheese is hot and bubbly.
  6. Let cool slightly before eating.
  7. Alternatively cook in the oven: Preheat oven to 425°F, line a baking sheet with foil and place popper holder on it. Cook for 15 to 18 minutes.
