The perfect summer meal! To make prep super easy for this meal you can purchase a frozen stir-fry mix or frozen sliced peppers.  To keep your kitchen super cool, use the Fagor 4 in 1 to cook the rice and the Breville electric stir-fry wok (both are non-stick so cleaning will be a breeze too).

Ingredients
  1. 2 teaspoons Grape seed oil
  2. 1/4 cup Scallions, chopped (green and white's separated)
  3. 1 Yellow bell pepper, seeded and sliced
  4. 1 Red bell pepper, seeded and sliced
  5. 1/2 medium Zucchini, quartered and sliced
  6. 1/2 medium Yellow squash, quartered and sliced
  7. 1 cup Grilled chicken, cut into medium chunks
  8. 1 small jar Robert Rothschild Roasted Pineapple & Habanero Dip
  9. 1 cup cooked rice
Instructions
  1. Heat oil in a wok or large frying pan over medium high heat, add onions (white parts only), peppers, and zucchini until slightly tender. Add chicken and sauce, heat until warm. Serve over rice, garnish with green onion tops.
