When it’s too hot to have the oven on but you still want pizza, it’s time to grill it. The trick is to use toppings that don’t require any or very little cooking and toppings with lots of flavor. Using flavored oil and vinegars can help.
Gilled Basil Genovese Pizza

Ingredients
- Pizza Dough
- 2 Tbsp Olive Oil Basil Genovese plus extra for brussing
- 1/3 cup Pecorino Cheese
- 2 Fresh Tomatoes, sliced
- 6 Fresh Basil Leaves, chiffonade
- 1 teaspoon Roasted Garlic Sea Salt
- Barrel Aged Dark Balsamic Vinegar, for garnishing
Instructions
- Preheat grill to 500 degrees F.
- Roll out pizza dough to desired thickness, brush both sides with oil. Poke the dough with a fork. Cook the dough directly on the grill for until slightly brown and crispy, about 10 minutes.
- Pull the crust off of the grill. Turn the dough over and place toppings on cooked side. Layer the toppings in the order of the ingredient list: drizzle of olive oil, cheese, tomato slices.
- Place on the grill again, and cook for another 5-10 minutes, or until crust is slightly golden around the edges and all the cheese is melted. Top with basil, Roasted Garlic Sea Salt and a drizzle of the Barrel Aged Dark Balsamic Vinegar.
