Touted as the “Champagne of Kombucha” JUN is milder and a little sweeter than it’s cousin. For those of you who may not have a great love of Kombucha, but you want the health properties, you may find that JUN is the perfect drink for you! You’ll need a jar or special fermenting crock with nothing metallic to make it. We’re a fan of the Mortier Pilon fermenting crocks, their cool design means we can have it right out in our kitchen. Ad the spout (which is plastic) makes for super easy dispensing!

Ingredients
- 8 cups filtered water
- 2 teaspoons loose leaf green tea
- scant ½ cup honey, preferably raw
- 1 Jun scoby
- ½ cup Jun tea from a previous batch
Instructions
- Heat water in a pot till it reaches 165°F in a kettle.
- Add the loose leaf green tea, stir to promote brewing process. Allow it to steep for 2 minutes. Add honey and stir until dissolved. allow to cool completely somewhere between 65°F and 75°F.
- Strain the tea through a fine-mesh sieve into your fermentation vessel. Then add the JUN scoby into the jar. Allow the tea to ferment for 3 days at room temperature.
- After three days, the Jun tea should smell pleasantly sour and faintly sweet. Carefully remove the Jun culture and ½ cup Jun tea from the top of the jar, and dump them into a waiting jar. The Jun culture and tea are now ready for you to prepare a second batch of Jun.
- Pour the remaining Jun tea into 4 pint-sized flip-top bottles, seal the bottles tightly and allow the Jun to ferment a second time for 2 to 3 days. After 2 to 3 days, your Jun tea is ready to drink.
- Place the bottles in the refrigerator to chill, or serve the Jun right away. Keep in mind that, that Jun will fizz and foam when you open the bottles, so open them over a sink.
Notes
- Jun Scobies can be purchased on line or found through several Facebook fermentation pages. You can add juices and flavorings to the second ferment, about 1/4 cup of juice is perfect.
- You can purchase flip-top bottles (beer bottles) through Amazon.
- We have successfully made JUN with bagged green tea also and it is fine to put tea in a tea ball that is NOT metal or a very high quality Stainless steel.
