Peach Caprese Salad

Summertime is salad time, a classic favorite is caprese.  In this version peaches become the star in place of tomatoes.  For another depth of flavor we like to grill our peaches, grilled or not it’s great and should make a showing at your summer time table.

Peach Caprese Salad
Serves 4

Ingredients
  1. 3 Peaches, sliced in rounds
  2. 8 ounces fresh Mozzarella, sliced in rounds
  3. 1/2 cup Cherry Tomatoes quartered
  4. 1 Tablespoon sliced Almonds, toasted
  5. Olive Oil (Basil Genovese or Tuscan Herb), for drizzling
  6. Summer Peach Vinegar for drizzling
  7. 5 leaves Basil chiffonade cut
  8. Sea Salt (Murray River or Lime Fresco) to taste
Instructions
  1. On a platter, arrange alternate pieces of peaches and mozzarella.
  2. Top with tomatoes and almonds.
  3. Drizzle with oil and peach vinegar.
  4. Garnish with fresh basil and sea salt.
