Strawberry, Asparagus & Pancetta Salad with Pomegranate Orange Vinaigrette

The perfect salad to tantalize your taste buds! This salad is sweet, salty, meaty and juicy with a nice tang. If you don’t have pancetta you can substitute bacon.  We recommend using the Zyliss salad spinner to rinse and store your salad.

Strawberry, Asparagus & Pancetta Salad with Pomegranate Orange Vinaigrette

Ingredients
  1. 2 tablespoons Vanilla Pomegranate Balsamic Vinegar
  2. 1 teaspoon Honey
  3. 1/4 cup Blood Orange Olive Oil
  4. Sel Gris Sea Salt
  5. Fresh Ground Black Pepper
  6. 8 slices Pancetta, diced small
  7. 1 tablespoon Frantoia Italian EV Olive Oil
  8. 8 Asparagus Spears, cut into 1" pieces
  9. Sel Gris Sea Salt
  10. 4 cups Fresh Greens
  11. 1/3 cup Peacans
  12. 1 cup Strawberries, quartered
  13. 2 tablespoons Balsamic Glaze
  14. Fresh Ground Black Pepper
Instructions
  1. In a small bowl whisk together the vinegar and honey. While whisking, slowly drizzle in the orange oil. Season to taste with sel gris & pepper. Set aside.
  2. Add the pancetta to a skillet and cook until almost crispy. Remove from the pan, leaving any renderings.
  3. Drizzle Frantoia olive oil in pan. Add the asparagus, sprinkle with sel gris, and cook until bright green.
  4. Place the greens on a large serving platter. Toss with the dressing to coat.
  5. Atop the dressed greens, arrange the strawberries, crispy prosciutto and asparagus. Finish with the chopped pecans, a drizzle of Balsamic Glaze, and fresh ground black pepper. Enjoy!
